Ingredients (view qty in metric system instead)
1/4 cup vegetable oil 1/4 cup all purpose flour 3 tbsp. chopped green onions 3 tbsp. diced celery 3 tbsp. chopped green bell pepper 1/2 tsp. minced fresh garlic 1/2 cup chopped onions 2 cups chicken broth 1/2 cup frozen sliced okra 1/3 cup canned tomato sauce 1/2 tsp. Cajun seasoning 6 ounces chopped cooked chicken 1 cup cooked long grain rice
Directions
Stir together oil and flour in a large saucepan. Cook, stirring, over medium high heat until flour turns deep brown. Add green onions, celery and bell pepper. Cook, stirring, 2 minutes over medium heat. Stir in garlic and onions. Cook, stirring, 2 minutes. Whisk in broth and heat to a boil. Add okra, tomato sauce and Cajun seasoning. Boil 15 minutes, stirring occasionally. Stir in chicken and continue cooking soup 15 minutes. Place 1/4 cup cooked rice in the bottom of each of 4 soup bowls. Ladle gumbo over and serve.
Serves 4.
