Hot and Bubbly Seafood Toast Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
1/2 pound cooked, chopped shrimp, lobster, crab or tuna
1/3 cup prepared mayonnaise
1 tsp. prepared mustard
2 tbsp. chopped green olives
2 tbsp. grated onion
2/3 cup grated Cheddar cheese
1 tbsp. lemon juice
1/8 tsp. white pepper
dash tabasco sauce
6 English muffin halves


Directions
Preheat oven to 350 degrees. Combine seafood, mayonnaise, mustard, olives, onion, Cheddar cheese, lemon juice, white pepper and tabasco in a large bowl. Place English muffin halves on a sheet pan and toast until golden. Remove muffin halves from oven and increase oven to broil. Mound seafood mixture onto muffin halves and broil 2 to 3 minutes until seafood is hot and bubbly. Cut each muffin half into 4 wedges and serve hot.

Makes about 2 dozen snacks.
