Ingredients   (view qty in metric system instead)
8 cups unfiltered apple cider
four 3 inch long strips lemon peel
two 6 inch long strips orange peel
3 star anise
5 whole cloves
2 cinnamon sticks
10 juniper berries
1/4 cup sugar
1 cup apple brandy

Directions
Place cider in a large saucepan and heat to a rolling boil. Strain through paper towels into a heatproof pitcher. Stir in lemon peel, orange peel, star anise, cloves, cinnamon sticks, juniper berries, and sugar. Let steep 1 hour at room temperature.

Just before serving:
Heat cider mixture in a large saucepan. Strain cider, discarding solids, and stir in brandy. Serve warm or hot.

Makes about 8 cups.
