Ingredients (view qty in metric system instead)
12 ounces pork tenderloin 1/4 tsp. salt 1/4 tsp. pepper 2 tbsp. vegetable oil 4 slices bread 2 cups hot, prepared mashed potatoes 2 to 3 tbsp. all purpose flour 1/4 tsp. pepper 1 cup chicken broth 2 tbsp. heavy or whipping cream
Directions
Preheat oven to 325 degrees. Season pork with salt and pepper. Heat oil in skillet. Add pork and sear on all sides. Roast 20 to 25 minutes or until meat thermometer registers 155 degrees. Stir flour into pork juices in skillet, also add any juices from roasting pan. Stir and cook 1 minute. Add broth and stir until thickened and boiling. Stin pepper and cream. Cook 1 minute. Let pork rest 5 to 10 minutes. Slice pork. Divide potatoes among 2 slices bread. Top with pork and remaining bread. Spoon gravy over.
Makes 2 sandwiches.
