Ingredients (view qty in metric system instead)
8 ounces sauerkraut, drained 2 1/2 tbsp. caraway seeds 3 pounds thinly sliced corned beef twenty four 10 inch flour tortillas 2 pounds shredded Swiss cheese 2 cups Thousand Island dressing
Directions
Stir together sauerkraut and caraway seeds in a medium bowl. Cover and set aside. Preheat griddle.
For each quesadilla: Place 4 ounces corned beef on a preheated griddle and heat through. Place 1 tortilla on the griddle and cover with 1 1/2 ounces of the Swiss cheese. Layer corned beef, sauerkraut mixture and another 1 1/2 ounces cheese on hot tortilla. Top with a second tortilla. Cook about 2 minutes per side until tortillas are lightly browned and cheese is melted. Cut into 4 wedges, transfer to a plate and serve with Thousand Island dressing on the side.
Makes 12 quesadillas.
