Ingredients (view qty in metric system instead)
2 slices rye bread 1 avocado, pitted, peeled and thinly sliced 1 small tomato, thinly sliced 1/4 cup plain yogurt 1/4 cup sliced black olives, drained 3 tbsp. chopped roasted cashews 2 tbsp. minced onion 1/4 cup shredded sharp cheddar cheese 1/4 cup shredded monterey jack cheese 6 slices mozzarella cheese
Directions
Preheat oven to 400 degrees. Put bread slices on sheet pan. top bread with avocado and tomato. Spoon 2 tbsp. yogurt over each sandwich, spreading evenly. Sprinkle with olives, cashews and onion. Top with cheeses. Bake until cheese melts and sandwich is heated through, approximately 3 to 5 minutes.
Serves 2.
