Ingredients (view qty in metric system instead)
2 tbsp. olive oil, divided 1/4 tsp. salt 1/4 tsp. pepper 1 cup fresh breadcrumbs 2 tbsp. prepared horseradish, drained 1 pound boneless pork loin 1 1/2 tbsp. dijon mustard
Directions
Preheat oven to 425 degrees. Heat 1 tbsp. oil in a large skillet. Add breadcrumbs, salt and pepper and cook over medium heat, stirring, until golden brown. Transfer breadcrumbs to a small bowl. Wipe out skillet and add remaining 1 tbsp. oil. Add pork and brown on all sides. Transfer pork to a shallow baking pan and coat top and sides evenly with dijon. Press breadcrumb mixture over pork. Roast pork to 155 degrees, about 20 to 25 minutes. Transfer pork to a plate and let stand 5 minutes before slicing.
Serves 2.
