Ingredients (view qty in metric system instead)
4 cups cubed red potatoes 3/4 cup water 1/4 cup finely chopped onion 1 tsp. Dijon mustard 1/8 tsp. pepper 3 tsp. cider vinegar one 6 3/4 ounce can Hormel chunk ham 2 tbsp. chopped fresh parsley
Directions
Combine potatoes, water, onion, Dijon and pepper in a large saucepan. Cover and bring to a boil over medium-high heat. Reduce heat and simmer 15 minutes. Drain ham and chop, reserving juices. Stir ham juices and vinegar into potatoes. Simmer, uncovered, 10 minutes. Remove pan from heat and stir in ham and parsley. Cover and let stand 10 minutes before serving.
Serves 4.
