Ingredients (view qty in metric system instead)
1 pound pork tenderloin 1/2 tsp. salt 1/2 tsp. pepper 2 tbsp. vegetable oil 1/4 cup prepared horseradish 1 cup dry breadcrumbs 2 hoagie or sandwich rolls sliced lengthwise 1/4 cup dijon mustard 2 tbsp. honey 2 medium tomatoes, sliced
Directions
Preheat oven to 325 degrees. Season pork with salt and pepper. Heat oil in skillet. Add pork and sear on all sides. Stir together horseradish and breadcrumbs and smear over pork. Roast pork 20 to 25 minutes or until meat thermometer registers 155 degrees. Let stand 10 minutes. Stir together honey and dijon and spread onto cut sides of rolls. Layer pork and tomatoes over.
Makes 2 sandwiches.
