Ingredients (view qty in metric system instead)
1/2 cup butter 3/4 cup brown sugar 2 tbsp. sugar 3 tbsp. honey 1/4 cup heavy or whipping cream 3 cups honey roasted peanuts 1 refrigerated pie crust
Directions
Preheat oven to 350 degrees. Combine butter, both sugars and honey in a medium saucepan. Heat to a simmer over medium heat, stirring constantly. Simmer until the mixture reaches 245 degrees on a candy thermometer. Remove the pan from the heat and stir in cream. Stir in honey roasted peanuts until well coated. Press the pie crust into a 10 inch tart pan with a removable bottom. Pour the peanut mixture over the crust, spreading peanuts evenly. Bake the tart about 15 to 20 minutes until the filling is bubbly and crust is golden. Transfer the pan to a rack and cool completely before slicing and serving.
Serves 8 to 10.
