2 pounds ground beef 4 tbsp. diced green onions 1/4 cup diced red bell pepper 3 tbsp. minced garlic, divided 2 tbsp. cracked black pepper 2 tbsp. olive oil 3 tbsp. chopped, canned chipotles in adobo 4 tbsp. diced green bell pepper 4 tbsp. diced red onion 4 tbsp. diced tomato 1 cup apple cider vinegar 1 tbsp. dry mustard 1 cup ketchup 1/2 cup honey 8 thick slices bacon 4 hamburger buns or kaiser rolls, split 8 slices tomato
Directions
Preheat grill. Stir together ground beef, green onions, red bell pepper and 1 tbsp. garlic in a large bowl. Form the beef mixture into 4 patties. Sprinkle the beef patties all over with the cracked black pepper and press lightly to adhere. Cover and refrigerate patties. Place olive oil in a large saucepan over medium heat. Add chipotles, green bell pepper, red onion, tomato, and remaining 2 tbsp. garlic to the pan. Cook 4 to 5 minutes until onion is softened, stirring frequently. Add cider vinegar and heat to a boil, stirring. Reduce heat and simmer the chipotle mixture 5 minutes, stirring occasionally. Stir in dry mustard. Transfer the mixture to a blender and puree until smooth. Return the mixture to the pan and stir in ketchup and honey. Bring to a simmer over low heat, stirring frequently. Place beef patties on an oiled grill rack. Grill burgers to desired doneness, basting frequently with some of the honey chipotle sauce. Meanwhile, cook bacon in a large skillet until just crisp. Spread 1 tsp. of the remaining honey chipotle sauce over each top and bottom hamburger or kaiser bun half. Place the grilled burgers on the bottom bun. Spoon any remaining honey chipotle sauce over burgers. Top each burger with 2 tomato slices. Cover with the top bun halves and serve.
Makes 4 burgers.
