Ingredients (view qty in metric system instead)
1 pound fresh broccoli florets 1 large onion, peeled and minced 2 tbsp. butter 3 tbsp. all purpose flour 1 cup hot milk 2 ounces crumbled roquefort cheese 1/2 tsp. tabasco sauce 1/2 tsp. salt 3 large eggs 1/2 cup dry breadcrumbs
Directions
Preheat oven to 350 degrees. Cook broccoli 10 minutes in boiling salted water. Drain broccoli and squeeze out excess liquid. Transfer to a food processor and chop. Melt butter in a large saucepan. Add onion and cook until tender. Stir in flour and cook 1 minute. Gradually stir in milk. Cook until mixture is thickened, stirring constantly. Remove pan from heat. Stir in roquefort, chopped broccoli and tabasco. Whisk together eggs and salt and stir into cooled broccoli mixture. Butter a shallow 2 quart baking dish and dust with breadcrumbs. Pour broccoli mixture into prepared dish. Bake 40 minutes.
Serves 4 to 6.
