Ingredients (view qty in metric system instead)
2 large eggs 1 tbsp. milk 1 tsp. chopped chives 1 tsp. chopped parsley leaves 1 tsp. chopped basil leaves 1/8 tsp. salt 1/8 tsp. pepper 1 1/2 tsp. melted butter 3 tbsp. grated Swiss cheese 3 tbsp. grated Cheddar cheese 2 tbsp. grated Parmesan cheese
Directions
Whisk together eggs, milk, chives, parsley, basil, salt and pepper in a medium bowl until well blended. Lightly coat the inside of a 10 inch skillet with cooking spray. Add butter to skillet and heat until bubbly over medium high heat. Pour egg mixture into the skillet and swirl slightly to coat bottom of pan. Cook until eggs are just set and still moist, about 2 to 3 minutes. Sprinkle Swiss, Cheddar and Parmesan cheeses over half of the omelet. Fold the other half of omelet over to cover cheeses. Remove skillet from the heat and let stand 1 minute. Slide omelet onto a plate and serve hot.
Makes 1 omelet.
