Ingredients (view qty in metric system instead)
5 cups all purpose flour 1 tsp. baking powder 2 tsp. sugar 1 tsp. salt 1 cup solid vegetable shortening plus additional for frying 1 can evaporated milk 1 large egg your choice canned fruit pie filling
Directions
Sift together flour and baking powder in a large bowl. Stir in sugar and salt. Cut shortening into flour mixture until crumbs form. Add egg and mix until well blended. Gather up dough and form into a ball. Flatten dough to a disc and wrap tightly with plastic wrap. Refrigerate at least 1 hour until dough is firm enough to roll. Roll out dough to about 1/8 inch thick. Cut out 4 1/2 to 5 inch diameter rounds. Spoon about 2 tbsp. pie filling over 1 side of each dough round. Fold other side of dough over filling and press edges with a fork to seal. Heat shortening in a large, deep skillet over medium high heat. Add pies and fry until golden brown.
Makes about 1 dozen pies.
