Ingredients (view qty in metric system instead)
1 cup yellow cornmeal 1 tbsp. ground cumin 1 tbsp. salt 1 tsp. pepper 1 tsp. ground coriander 1 tsp. cayenne pepper 1 1/2 cups all purpose flour 2 large eggs, beaten to blend 4 boneless chicken breast halves, about 6 to 8 ounces each
Directions
Stir together cornmeal, cumin, salt, pepper, coriander and cayenne in a medium bowl. Place flour in a separate bowl. Place eggs in a pie plate. Dredge chicken in flour to coat, shaking off excess. Coat chicken completely with egg then dredge in cornmeal to coat. Place coated chicken on a wax paper lined sheet pan. Let chicken stand 30 minutes.
Preheat oven to 400 degrees. Pour oil into a large skillet to a depth of 1/4 inch. Heat oil over medium high heat. Add chicken and fry about 2 minutes per side until golden brown. Transfer chicken to a sheet pan and bake about 20 minutes until cooked through. Serve chicken immediately.
Serves 4.
