Home Made Fruit Walnut and Sunflower Energy Bars

Ingredients (view qty in metric system instead)
1 1/2 cups wheat flour 1/3 cup raw wheat germ 2 tsp. baking powder 1/2 tsp. salt 1/2 cup chopped dried dates 1/2 cup chopped dried prunes 1/2 cup chopped dried apricots 1/2 cup chopped walnuts 3 tbsp. sunflower seed kernels 3 large eggs 1/2 cup vegetable oil 1/2 cup honey 1 tsp. vanilla extract
Directions
Preheat oven to 325 degrees. Grease an 8 inch square cake dish. Stir together flour, wheat germ, baking powder and salt in a large bowl. Stir in dates, prunes, apricots, walnuts and sunflower kernels. Stir together eggs, oil, honey and vanilla in a medium bowl. Stir the egg mixture into the dry ingredients until just combined. Spread the batter in the prepared dish. Bake about 35 to 40 minutes until a toothpick comes out clean. Transfer the bars to a rack and cool completely before cutting into squares.
Makes about 1 1/2 dozen bars.
