Ingredients (view qty in metric system instead)
1/2 cup egg yolks 1/2 cup water 5 tbsp. lemon juice 1 cup cold butter, diced 1/4 tsp. white pepper 1 tbsp. minced fresh basil or chives
Directions
Whisk together yolks, water and lemon juice. Cook over very low heat until bubbly at edges or mixture reaches 160 degrees. Gradually whisk in butter. Stir in pepper and chives or basil. Cover and keep warm until use.
Makes approx. 1 1/2 cups sauce.
