Holiday Turkey with Herbed Sausage Cornbread Stuffing

Ingredients (view qty in metric system instead)
1 pound ground sausage 1 1/2 cups chopped onion 1 cup chopped celery 6 cups coarsely crumbled corn bread 1/3 cup half and half 1/4 cup sherry 1 tsp. dried thyme 1 tsp. dried basil 1 tsp. dried oregano 1/2 tsp. garlic powder 14 to 16 pound thawed turkey 2 tsp. seasoned salt melted butter for basting
Directions
Preheat oven to 325 degrees. Cook sausage in a large skillet until browned, breaking up clumps. Add onions and celery and cook about 5 minutes until softened, stirring occasionally. Stir in corn bread, half and half, sherry, thyme, basil, oregano and garlic powder. Rinse the turkey. Rub the inside of the turkey cavity with the seasoned salt. Pack the prepared cornbread dressing loosely into the turkey cavity. Truss turkey legs to seal. Place the turkey, breast side up, on a rack in a large roasting pan. Roast turkey 4 to 5 hours, basting frequently with the melted butter, until temperature reaches 180 degrees. Transfer turkey to a platter and tent loosely with foil. Let turkey stand 20 minutes before carving.
Serves 10 to 12.
