Ingredients (view qty in metric system instead)
1 cup dark rum 1 1/2 cups dark raisins 1 1/3 cups evaporated milk 3 1/3 cups sugar 1 tsp. salt 4 tbsp. butter 20 ounces chopped bittersweet chocolate 12 ounces mini marshmallows
Directions
Combine rum and raisins in a small bowl. Let stand 30 minutes at room temperature.
Lightly coat the inside of a 9x13 inch baking pan with cooking spray. Combine evaporated milk, sugar, salt and butter in a large saucepan. Cook, stirring, over medium heat until sugar is dissolved. Heat to a boil over high heat. Cook, without stirring, until mixture reaches 238 degrees on a candy thermometer. Remove the pan from the heat and add marshmallows and chocolate. Stir until melted and smooth. Drain the raisins well and stir into the fudge. Spread evenly in the prepared pan. Transfer pan to a rack and cool completely. Cut into squares.
Makes about 4 dozen pieces.
