Ingredients (view qty in metric system instead)
2 cups dry biscuit mix 2 tbsp. brown sugar 2 tsp. ground cinnamon 1 1/2 cups evaporated milk 1 tsp. ground allspice 1/2 cup canned pumpkin puree 2 tbsp. vegetable oil 2 large eggs 1 tsp. vanilla extract
Directions
Combine biscuit mix, sugar, cinnamon and allspice in a large bowl. Add milk, pumpkin, oil, eggs and vanilla. Beat until smooth. Pour 1/4 to 1/2 cup batter onto a preheated lightly greased griddle. Cook until top of pancake is bubbly and edges are dry. Flip and cook until golden. Serve immediately with syrup or honey.
Makes about 12 to 16 pancakes.
