Ingredients (view qty in metric system instead)
12 tbsp. mayonnaise 2 tsp. Dijon mustard 4 cups peeled, coarsely grated carrots 1/2 cup dried currants 2 tbsp. chopped shallot 1/4 tsp. salt 1/4 tsp. pepper
Directions
Stir together mayonnaise and Dijon in a medium bowl until well blended. Add carrots, currants, shallots, salt and pepper and stir to coat. Cover and refrigerate salad at least 1 hour before serving.
Serves 4.
