8 pound bone-in smoked half ham 3/4 cup brown sugar 1/3 cup cider vinegar 1/4 cup golden raisins 8.75 ounce can sliced peaches in heavy syrup, drained, juices reserved, peaches chopped 1 tbsp. cornstarch 1/4 cup orange juice 8.25 ounce can crushed pineapple with juices 1 tbsp. finely grated orange peel 1 medium clove garlic, peeled and crushed 1/2 tsp. dried red pepper flakes 1/4 tsp. peeled, grated fresh ginger
Directions
Preheat oven to 325 degrees. Place the ham, fat side up, on a rack set in a large roasting pan. Roast ham 3 hours. Meanwhile, Combine brown sugar, cider vinegar, raisins and reserved peach syrup in a medium saucepan. Bring to a boil over medium high heat, stirring occasionally. Reduce heat to low and simmer 10 minutes, stirring occasionally. Stir together cornstarch and orange juice in a small bowl until smooth. Stir the cornstarch mixture into the vinegar mixture along with chopped peaches, crushed pineapple with juices, orange peel, garlic, red pepper flakes and ginger. Cook, stirring constantly, until mixture boils and thickens. Remove the pan from the heat. Brush half of the mixture over the ham. Roast ham an additional 30 minutes until temperature reaches 160 degrees. Remove the ham from the oven and brush with the remaining peach mixture. Let ham stand 20 minutes before slicing and serving.
Serves 8 to 10.
