Ingredients (view qty in metric system instead)
3 cups water 1/2 lemon, sliced 1/3 cup Worcestershire sauce 1/4 cup white wine 2 tbsp. kosher salt 1 tbsp. pepper 1 tbsp. sugar 1 1/2 tsp. dried thyme 1 1/2 tsp. crushed red pepper flakes 4 catfish fillets, about 6 to 8 ounces each hickory chips
Directions
Stir together water, lemon slices, Worcestershire, wine, salt, pepper, sugar, thyme and pepper flakes in a large bowl. Add catfish fillets and turn to coat. Cover and refrigerate 3 to 4 hours.
Prepare smoker using hickory chips. Remove the catfish fillets from the brine and place on a rack in the hot smoker. Smoke catfish until lightly smoked and cooked through. Serve hot.
Serves 4.
