Ingredients (view qty in metric system instead)
2 large tomatoes, seeded and halved 1 red onion, halved vertically and sliced thinly 1 red bell pepper, cored and quartered 1 zucchini, stemmed ans sliced lengthwise into 1/4 inch thick slices 1 small eggplant sliced into 1/4 inch thick rounds 4 cloves garlic, peeled 1 1/2 tbsp. olive oil 1/4 cup minced fresh parsley 1 tsp. crumbled dry rosemary 1/2 tsp. salt 1/2 tsp. pepper 4 long sandwich rolls 2 cups arugula or mixed greens
Directions
Preheat oven to 400 degrees. Combine tomatoes, onion, bell pepper, zucchini, eggplant, garlic and oil in a roasting pan. Roast 30 minutes, stirring frequently. Stir in parsley and rosemary and roast 15 minutes until vegetables are tender. Remove garlic and slice thinly. Return to pan. Stir in salt and pepper. Slice rolls in 1/2 horizontally. Place in oven and toast 3 minutes. Divide vegetables among rolls. Top with lettuce and top of roll.
Serves 4.
