Ingredients (view qty in metric system instead)
5 tbsp. Dijon mustard 2 tbsp. olive oil 1 medium clove garlic, peeled and minced 1/2 tsp. dried Italian seasoning 2 pounds small red potatoes, quartered
Directions
Preheat oven to 425 degrees. Coat a large, shallow baking pan with cooking spray. Stir together Dijon, olive oil, garlic and Italian seasoning in a large bowl. Add potatoes and toss well to coat. Transfer the coated potatoes to the prepared pan. Bake 35 to 40 minutes, stirring occasionally, until tender. Serve hot.
Serves 4 to 6.
