Ingredients (view qty in metric system instead)
1 1/2 cups soft, fresh bread crumbs 2 tbsp. minced fresh parsley leaves 1 tbsp. minced fresh chives 1 1/2 tsp. minced fresh rosemary leaves 1/2 tsp. salt 1/4 tsp. pepper 3 1/2 tbsp. olive oil, divided 4 pork chops, about 6 to 8 ounces each 2 tbsp. Dijon mustard
Directions
Preheat oven to 400 degrees. Stir together bread crumbs, parsley, chives, rosemary, salt, pepper and 2 1/2 tbsp. oil well combined. Heat the remaining 1 tbsp. olive oil in a large skillet over medium high heat. Add pork chops and cook about 3 to 4 minutes per side until browned. Transfer chops to a 13x9 inch baking pan. Spread the Dijon over the top of each pork chop. Sprinkle the bread crumb mixture over the Dijon and press lightly to adhere. Bake chops about 5 to 30 minutes until cooked through and topping is crisp and browned. Serve chops immediately.
Serves 4.
