Ingredients (view qty in metric system instead)
4 slices bacon, cut into 1 inch pieces 1 medium onion, peeled and sliced 2 to 2 1/2 pounds chicken pieces(breasts, legs, thighs) 1/4 tsp. salt 1/4 tsp. pepper 16 ounce can chopped tomatoes, drained 1/3 to 1/2 cup Heinz 57 sauce 1 tbsp. sugar hot buttered rice
Directions
Cook bacon in a large skillet until halfway done. Add onion. Cook until onion is tender, about 8 minutes. Reserve bacon-onion mixture. Drain drippings from skillet, reserving 2 tbsp. Return reserved drippings to skillet and heat. Add chicken pieces and brown on all sides. Sprinkle with salt and pepper. Drain excess fat from skillet. Stir together bacon-onion mixture, tomatoes Heinz 57 sauce and sugar in a small bowl. Pour over chicken. Cover and simmer 40 to 45 minutes until chicken is tender and cooked through, basting occasionally. Serve immediately over rice.
Serves 4 to 6.
