16 ounce package uncooked elbow macaroni 4 tbsp. butter, divided 12 ounces chopped fresh mushrooms 1 small onion, peeled and finely chopped 1 tbsp. all purpose flour 3/4 tsp. dry mustard 1/2 tsp. salt 1/4 tsp. pepper 1 1/2 cups milk 3 cups grated sharp Cheddar cheese 2 tbsp. chopped fresh parsley leaves 8 slices thick cut bacon, chopped 1 cup soft, fresh bread crumbs
Directions
Bring a large pan of lightly salted water to a boil. Add macaroni and boil until just cooked through. Drain well. Preheat oven to 350 degrees. Butter the inside of a 13x9 inch baking dish. Melt 2 tbsp. butter in a large saucepan over medium high heat. Add onion and mushrooms and cook about 5 minutes until softened, stirring occasionally. Add flour, dry mustard, salt and pepper. Cook, stirring, 1 minute. Whisk in milk. Cook, whisking, about 3 minutes until sauce is slightly thickened. Remove the pan from the heat and add Cheddar and parsley. Stir until cheese is melted. Add cooked macaroni and stir to coat. Cook bacon in a large skillet over medium high heat until crisp and browned. Drain bacon on paper towels. Stir 1/2 of the bacon into the macaroni cheese mixture. Transfer the macaroni to the prepared dish. Sprinkle the remaining macaroni over the top. Melt the remaining 2 tbsp. butter in a medium skillet over medium heat. Add bread crumbs and cook, stirring, 3 minutes until crumbs are browned. Sprinkle the bread crumbs over the macaroni. Bake about 20 to 25 minutes until the macaroni is heated through and the topping is golden brown. Serve hot.
Serves 6 to 8.
