Ingredients (view qty in metric system instead)
1 1/4 pounds cooked ham 1 small shallot, minced 1 tbsp. butter 1/2 cup white wine 3 tbsp. Madeira 1 tbsp. cognac 1/2 tsp. tomato paste 1 cup heavy or whipping cream 1/4 tsp. pepper
Directions
Slice the ham. Melt butter in a large skillet over medium-high heat. Add shallot and cook 2 minutes, stirring frequently. Add wine and ham and bring to a boil. Reduce heat and simmer 5 minutes. Transfer ham to a plate and tent with foil. Add Madeira and cognac to skillet and boil 2 minutes. Whisk in tomato paste and cream and return to a boil. Simmer sauce 5 minutes until thickened. Stir in pepper. Serve ham with sauce.
Serves 4.
