Ham and Cheese Fusili Casserole Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
16 ounce package uncooked fusili pasta
2 tsp. vegetable oil
2 tbsp. butter
2/3 cup chopped onion
3 tbsp. all purpose flour
3 cups milk
8 ounces shredded Cheddar cheese
1 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne pepper
14 ounce can chopped tomatoes
8 ounces sliced baked ham, cut into strips
1 cup frozen peas
1/3 cup dry breadcrumbs
1 tbsp. grated Parmesan cheese
1 tbsp. chopped fresh parsley leaves


Directions
Preheat oven to 375 degrees. Lightly grease the inside of a medium casserole dish. Heat a large pot of lightly salted water to a boil. Add pasta and boil about 8 to 10 minutes until almost tender, stirring frequently. Drain pasta well. Drizzler the olive oil over the pasta and toss to coat. Melt butter in a medium saucepan over medium high heat. Add onions and cook 3 minutes, stirring frequently. Add flour and cook, stirring, 1 minute. Add milk and heat to a boil, stirring constantly. Reduce heat to medium low and simmer 5 minutes until thickened, stirring frequently. Remove the pan from the heat and stir in Cheddar, mustard, salt, pepper and cayenne. Pour the sauce mixture into a large bowl. Add cooked pasta, tomatoes, ham strips and peas and toss to combine. Pour the casserole mixture into the prepared dish. Stir together the breadcrumbs, Parmesan and parsley in a small bowl. Sprinkle the crumb mixture evenly over the top of the casserole. Bake the casserole about 15 to 20 minutes until heated through and the topping is golden.
