16 ounce package uncooked fusili pasta 2 tsp. vegetable oil 2 tbsp. butter 2/3 cup chopped onion 3 tbsp. all purpose flour 3 cups milk 8 ounces shredded Cheddar cheese 1 tsp. dry mustard 1/2 tsp. salt 1/4 tsp. pepper 1/8 tsp. cayenne pepper 14 ounce can chopped tomatoes 8 ounces sliced baked ham, cut into strips 1 cup frozen peas 1/3 cup dry breadcrumbs 1 tbsp. grated Parmesan cheese 1 tbsp. chopped fresh parsley leaves
Directions
Preheat oven to 375 degrees. Lightly grease the inside of a medium casserole dish. Heat a large pot of lightly salted water to a boil. Add pasta and boil about 8 to 10 minutes until almost tender, stirring frequently. Drain pasta well. Drizzler the olive oil over the pasta and toss to coat. Melt butter in a medium saucepan over medium high heat. Add onions and cook 3 minutes, stirring frequently. Add flour and cook, stirring, 1 minute. Add milk and heat to a boil, stirring constantly. Reduce heat to medium low and simmer 5 minutes until thickened, stirring frequently. Remove the pan from the heat and stir in Cheddar, mustard, salt, pepper and cayenne. Pour the sauce mixture into a large bowl. Add cooked pasta, tomatoes, ham strips and peas and toss to combine. Pour the casserole mixture into the prepared dish. Stir together the breadcrumbs, Parmesan and parsley in a small bowl. Sprinkle the crumb mixture evenly over the top of the casserole. Bake the casserole about 15 to 20 minutes until heated through and the topping is golden.
Serves 6.
