Ham Vegetable and Three Cheese Macaroni and Cheese

Ingredients (view qty in metric system instead)
12 ounces uncooked elbow macaroni 1/4 cup butter 4 ounces diced cooked ham 1 medium carrot, peeled and thinly sliced 1 small zucchini, diced 1/2 cup sliced fresh mushrooms 1 cup heavy or whipping cream 1/2 cup grated Swiss cheese 1/2 cup grated Cheddar cheese 1/4 cup grated Parmesan cheese pinch ground nutmeg 1/2 cup dry breadcrumbs
Directions
Preheat oven to 350 degrees. Grease the inside of a shallow, medium baking dish. Heat a large pot of lightly salted water to a boil. Add macaroni and cook until just tender. Drain pasta well. Meanwhile, melt butter in a large skillet over medium heat. Add ham, carrot, zucchini and mushrooms and cook, stirring frequently, about 3 minutes until vegetables are crisp tender. Add cream and simmer about 3 minutes until slightly thickened. Stir together Swiss, Cheddar and Parmesan in a medium bowl. Gradually add cheese mixture and stir until melted and combined. Stir in nutmeg and cooked macaroni. Transfer macaroni mixture to the prepared dish. Sprinkle bread crumbs evenly over macaroni. Bake 40 minutes. Serve hot.
Serves 4.
