Ingredients (view qty in metric system instead)
Dressing: 2 tbsp. vegetable oil 1/4 cup peanut butter 3 tbsp. fresh lime juice 1 tbsp. reduced-sodium soy sauce 1 tsp. ground ginger 1/2 tsp. minced garlic 1 tbsp. sugar
Salad: 12 ounces cooked ham, thinly sliced 1 medium cucumber, peeled, seeded and thinly sliced 1/2 of a medium red onion, thinly sliced 6 cups chopped romaine lettuce 1 head radicchio or boston lettuce
Directions
For Dressing: Combine oil, peanut butter, lime juice, soy sauce, ginger, garlic and sugar in a blender or food processor. Process until well mixed. Place in a small saucepan or microwave- safe measuring cup. Heatover low flame.
For Salad: Toss together cucumber, onion and romaine in a large bowl. Line salad plates with radicchio or boston lettuce leaves. Spoon salad over. Warm ham slices in a skillet or microwave and arrange on top of salad. Pour hot dressing over.
Serves 4 to 6.
