Ham, Bacon and Sausage Breakfast Casserole Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
10 slices bacon
1 pound ground breakfast sausage
1 cup cooked, chopped ham
30 ounce package frozen hash brown potatoes
1/2 cup chopped green onions
1/2 cup chopped green bell pepper
2 cups shredded cheddar cheese, divided
6 large eggs
1/2 cup milk
1/2 cup sour cream
1/2 tsp. salt
1/4 tsp. pepper

Directions
Preheat the oven to 400 degrees. Lay the bacon strips out on a rimmed sheet pan. Bake the bacon 10 minutes. Turn the bacon slices over and bake an additional 8 to 10 minutes until crisp. Place the bacon strips on paper towels to drain. Crumble the bacon and transfer to a medium bowl. Place the sausage in a large skillet over medium high heat and cook until browned, breaking up clumps. Drain the fat from the skillet. Add the cooked sausage to the bacon. Place the chopped ham in the same skillet and lightly brown over medium heat. Add the ham to the bacon and sausage. Decrease the oven to 350 degrees. Grease the inside of a 9x13 inch baking pan. Spread the hash browns in the bottom of the pan. Spoon the meats over the potatoes. Sprinkle with the green onions, bell pepper and 1 1/2 cups cheddar. Whisk together the eggs, milk, sour cream, salt and pepper in a medium bowl. Pour the egg mixture over the layers in the pan. Bake the casserole 40 minutes. Sprinkle the remaining 1/2 cup cheddar over the top and bake an additional 5 minutes until melted. Let the casserole stand a few minutes before serving. Cover and refrigerate any leftovers.

Serves 8 to 10.
