Ingredients (view qty in metric system instead)
Sauce Caribe: 4 ounces chopped fresh spinach 1 1/4 cups prepared mayonnaise 3 anchovy fillets, minced 2 small cloves garlic, minced 1 1/2 tsp. minced chives 1 tsp. minced parsley 1 tsp. capers 1/2 tsp. fresh lemon juice 1/4 tsp. salt 1/4 tsp. pepper
Lobster: vegetable oil for frying 1 cup dry breadcrumbs 1/4 cup ground almonds 1 1/2 tbsp. chopped chives eight 4 ounce lobster tails, shells discarded 1 cup prepared mayonnaise
Directions
For Sauce: Stir together spinach, mayonnaise, anchovy, garlic, chives, parsley, capers, salt and pepper in a small bowl until well blended. Cover and refrigerate overnight. Let stand 1 hour at room temperature before serving.
For Lobster: Heat oil to 350 degrees in a fryer or deep pan. Stir together breadcrumbs, almonds and chives in a pie plate. Coat lobster tails with mayonnaise, wiping off excess. Fry about 5 minutes until golden brown on all sides. Drain well on paper towels. Serve with sauce.
Serves 4.
