Ingredients   (view qty in metric system instead)
1 large onion, peeled and chopped
4 cloves garlic, chopped
1 medium tomato, seeded and chopped
1/2 of a red bell pepper, seeded and chopped
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
1/4 tsp. turmeric
1/3 cup brown sugar
1/2 cup beer
1/4 cup apple cider vinegar
1 tbsp. worcestershire sauce
1/4 tsp. tabasco sauce

4 to 5 pounds meaty pork ribs

Directions
Combine onion, garlic, tomato, bell pepper, salt, pepper, paprika, turmeric, brown sugar, beer, vinegar, worcestershire and tabasco in a blender. Process until smooth. Place ribs in a deep glass or ceramic baking dish. Pour sauce over and turn to coat. Cover and refrigerate 3 hours. Preheat grill. Cross 2 sheets of heavy-duty aluminum foil. Remove ribs from marinade, reserving marinade. Place ribs in the center of the aluminum foil. Pour 1/2 cup marinade over. Fold foil inward to cover ribs. Pinch edges to seal. Place on grill. Cover and cook 110 minutes. Remove ribs from foil and place directly on grill. Grill 5 minutes per side, basting with marinade.

Serves 4 to 6.
