Ingredients (view qty in metric system instead)
4 whole trout, cleaned 1 tsp. garlic powder 1 tsp. crushed red pepper flakes 1/2 tsp. salt 1/2 cup fine dry breadcrumbs 1/4 cup finely chopped fresh spinach pinch dried thyme pinch ground sage 4 tbsp. pine nuts 1 large egg, beaten to blend 4 slices bacon 1/4 cup dry white wine
Directions
Prepare barbecue grill. Combine garlic powder, pepper flakes and salt in a small bowl. Rub mixture into the skin and cavity of trout. Combine bread crumbs, spinach, thyme, sage, pine nuts and egg in a medium bowl and mix well. Stuff the mixture into the trout cavities. Wrap 1 slice bacon around each fish. Place each fish on a square of foil. Sprinkle 1 tbsp. wine over each fish. Fold the foil to make tight packages. Grill trout about 4 inches over coals, about 10 minutes per side.
Serves 4.
