Ingredients (view qty in metric system instead)
Beef: 5 tbsp. butter 6 green onions, minced 1 pound chopped mushrooms 3/4 cup bread crumbs 1 large egg 1/2 tsp. salt 1/2 tsp. dried thyme 1/4 tsp. pepper 1/4 cup chopped fresh parsley 5 pounds beef tenderloin
Sauce: 7 tbsp. butter, softened 1/4 cup prepared mustard 1/4 cup brandy
Directions
For beef: Cook onions and mushrooms with butter in a skillet until tender. Stir in breadcrumbs, egg, salt, thyme, pepper and parsley. Cut a deep slit the length of the tenderloin. Stuff with mushroom mixture and tie with string to secure. Prepare grill. Grill tenderloin about 20 minutes or to desired doneness, basting with sauce. Let rest 5 minutes then slice.
For sauce: Stir together butter, mustard and brandy.
Serves 8 to 10.
