Ingredients (view qty in metric system instead)
Glaze: 1 large onion, peeled and minced 1 large apple, peeled, cored and diced 1/2 cup cider vinegar 1 1/4 cups apple jelly 1/2 cup apple cider 1/4 cup apple brandy 3 large cloves garlic, peeled and minced 1 tsp. ground allspice 1/2 tsp. cracked black peppercorns 2 tbsp. lime juice 1/2 tsp. Tabasco sauce 1/2 tsp. salt
Ribs: 6 racks baby back pork ribs, about 1 1/2 pounds each 1 tsp. salt 1 tsp. pepper 1/2 cup apple cider 1/4 cup lime juice
Directions
For Glaze: Combine onion, apple and cider vinegar in a large saucepan. Cover and cook, stirring occasionally, about 15 minutes until onions are tender and liquid is mostly evaporated. Add apple jelly, cider, brandy, garlic, allspice and peppercorns. Simmer about 15 minutes, stirring frequently, until thick. Stir in lime juice and Tabasco. Simmer about 20 minutes until thick. Transfer mixture to a food processor and blend to a chunky puree.
For ribs: Season ribs on both sides with salt and pepperand let stand 45 minutes. Prepare grill. Stir together cider and lime juice in a small bowl. Place ribs on grill and sear about 5 minutes per side. Brush with some of lime mixture. Cover ribs and grill until almost tender, about 15 minutes, basting occasionally. Brush glaze over ribs and continue grilling until tender, about 5 minutes.
Serves 6.
