Ingredients (view qty in metric system instead)
4 swordfish steaks, about 4 ounces each 1 tsp. minced fresh rosemary leaves 1 tsp. finely grated lemon peel 1 clove garlic, minced 1 tbsp. fresh lemon juice 1/4 tsp. pepper
Directions
Place swordfish steaks in a large baking dish. Stir together rosemary, lemon peel and garlic in a small bowl. Press mixture evenly onto 1 side of each steak. Cover and refrigerate 1 hour.
Prepare barbecue grill. Coat a grill rack with nonstick spray and place over medium-hot coals. Place swordfish on grill. Stir together lemon juice and pepper in a small bowl. Brush mixture over swordfish. Cook fish about 6 minutes per side until done, basting frequently with lemon-pepper mixture. Serve immediately.
Serves 4.
