Ingredients (view qty in metric system instead)
1 tbsp. vegetable oil 1 cup minced onion 1 cup fresh raspberries 1 cup ketchup 2 tbsp. raspberry vinegar 1/2 tsp. salt 1/4 tsp. chili powder 1/8 tsp. ground cumin 1/8 tsp. crushed red pepper flakes 1/4 tsp. pepper 24 large shrimp, peeled and deveined, tails left on
Directions
Prepare grill. Heat oil in a medium saucepan. Add onion and cook, stirring, 2 minutes. Stir in raspberries and cook 1 minute. Stir in ketchup, raspberry vinegar, salt, chili powder, cumin, pepper flakes and pepper. Simmer 5 minutes, stirring occasionally. Thread 6 shrimp on each of 4 skewers. Brush with 1/2 cup of the sauce. Grill 2 minutes over medium heat. Turn shrimp over and brush with remaining sauce. Grill an additional 2 minutes until shrimp is cooked through. Serve immediately.
Serves 4.
