Ingredients (view qty in metric system instead)
2 cups chicken broth 1 cup fruity white wine 1 1/4 pounds ripe red or purple plums, pitted, finely chopped 1 tbsp. sugar 1/2 tsp. lemon juice 1/2 tsp. salt 1/4 tsp. pepper 2 pork tenderloins, 12 to 16 ounces each
Directions
Combine broth and wine in a medium saucepan. Bring to a boil over high heat. Boil until reduced to 3/4 cup, about 15 minutes. Stir in plums, sugar, lemon juice, salt and pepper. Boil 3 minutes, stirring occasionally. Transfer sauce mixture to a blender or food processor and puree. Strain sauce into a small saucepan, pressing on solids.
Meanwhile, prepare grill. Fold the ends of each pork tenderloin under middle to make the meat uniformly thick. Grill pork, turning frequently, about 30 to 40 minutes until internal temperature reaches 150 degrees. Transfer pork to a cutting board and let stand 10 minutes. While pork is resting, reheat sauce over low heat, stirring occasionally. Slice pork and serve with sauce.
Serves 4.
