Grilled Pork Tenderloin with Fresh Cherry Sauce

Ingredients (view qty in metric system instead)
Glaze: 3/4 cup cherry preserves 3 tbsp. balsamic vinegar 3/4 tsp. ground allspice
Sauce: 1 tbsp. vegetable oil 2/3 cup chopped onion 2 cups fresh pitted cherries 1/4 tsp. cayenne pepper
Pork: 1 1/2 pound pork tenderloin 1/2 tsp. salt 1/4 tsp. pepper
Directions
Prepare grill.
For Glaze: Stir together cherry preserves, vinegar and allspice in a medium bowl.
For Sauce: Heat oil in a large skillet over medium high heat. Add onion and cook 1 minute. Add cherries, cayenne and 1/4 cup cherry preserve mixture. Boil about 8 to 10 minutes, stirring frequently, until thickened. Remove pan from the heat.
For Pork: Season pork with salt and pepper. Brush some of the remaining cherry preserve mixture over pork. Grill, turning frequently, until browned. Move pork to a cool spot on the grill and cook about 25 minutes, brushing with glaze and turning frequently, until pork reaches 145 degrees. Transfer pork to a serving dish and let stand 10 minutes before slicing and serving. Serve with warm cherry sauce.
Serves 4.
