Grilled Pork Tenderloin with Chipotle Stuffing

15 ounce pork tenderloin 2 tbsp. canned chipotle chilies with adobo, chopped 1/3 cup plain yogurt 1 tbsp. olive oil 1 1/2 tsp. whole dried cumin seed 1 tbsp. adobo sauce from chipotles prepared guacamole
Directions
Prepare grill. Place the tenderloin on a cutting board. Cut a slit, horizontally, in the long side of the pork, to within 1/2 inch of the other side of pork. Open pork like a book. Spread chopped chipotles over cut sides of pork. Close pork and press to adhere. Whisk together yogurt, olive oil, cumin seeds and 1 tbsp. adobo sauce in a small bowl. Brush yogurt mixture all over pork and let stand 15 minutes. Place pork on an oiled grill rack. Cover and grill until pork is cooked through, brushing occasionally with yogurt mixture. Transfer pork to a plate and let stand 5 minutes before slicing and serving.
Serves 2 to 3.
