Grilled Pork Chops with Bourbon Barbecue Sauce

Ingredients (view qty in metric system instead)
1 tbsp. vegetable oil 1 medium onion, peeled and thinly sliced 1 tsp. dried thyme 3 tbsp. bourbon 1/2 cup prepared barbecue sauce 2 pork loin chops, about 6 to 8 ounces each 1/4 tsp. salt 1/4 tsp. pepper
Directions
Heat oil in a medium saucepan over medium high heat. Add onion and cook about 5 minutes, stirring occasionally, until tender. Add thyme and cook, stirring, 1 minute. Add bourbon and simmer 1 to 2 minutes until reduced to a glaze. Stir in barbecue sauce.
Prepare grill. Season both sides of pork chops with salt and pepper. Grill chops 5 minutes per side. Brush pork with the barbecue sauce and grill another 5 minutes. Flip chops over, brush with sauce and grill an additional 5 minutes until cooked through. Transfer pork chops to plates, spoon remaining sauce over and serve.
Serves 2.
