Grilled Italian Sausage with Sweet Peppers and Onions

Ingredients (view qty in metric system instead)
1/4 cup olive oil 2 1/2 pounds sweet green bell peppers, cored, seeded and sliced into 1 inch strips 1 1/2 pounds yellow onions, peeled and thinly sliced 1/2 tsp. salt 1/4 tsp. pepper 3 tbsp. red wine vinegar 3 pounds sweet or hot Italian sausage links
Directions
Prepare grill. Heat oil in a large skillet. Add peppers and onions and cook, stirring frequently, until tender, about 15 minutes. Stir in salt, pepper and red wine vinegar. Remove pan from the heat. Transfer peppers and onions to a large square of tinfoil. Fold up edges of foil to form a package and seal. Place sausage links on a grill rack and cook 25 to 30 minutes, until cooked through. Halfway through cooking sausages, place package with onions and peppers on the grill. Transfer grilled sausages to plates and spoon the pepper and onion mixture over. Serve immediately.
Serves 6.
