Ingredients (view qty in metric system instead)
Catfish: 2 tbsp. orange juice 2 tbsp. vegetable oil 2 tsp. minced garlic 1 tsp. ground ginger 1/2 tsp. salt 1/2 tsp. pepper 4 catfish fillets, about 6 to 8 ounces each
Sauce: 3/4 cup orange juice 1 tsp. cornstarch 1 tbsp. reserve orange ginger mixture
Directions
For Catfish: Preheat grill. Combine orange juice, oil, garlic, ginger, salt and pepper in a small bowl. Reserve 1 tbsp. of the mixture for use in making the sauce. Brush remaining orange-ginger mixture all over both sides of catfish. Place catfish fillets on an oiled grill rack. Grill fillets about 4 inches from the heat, about 7 to 10 minutes, until catfish is cooked through. Meanwhile, prepare sauce.
For Sauce: Combine orange juice, cornstarch and reserved 1 tbsp. orange-ginger mixture from above recipe in a small saucepan. Cook, stirring, over low heat until sauce is thickened, about 5 minutes.
Divide catfish between 4 plates, spoon sauce over and serve.
Serves 4.
