Ingredients (view qty in metric system instead)
1/4 cup frozen, thawed lemonade concentrate 1/2 cup canned crushed pineapple 1 tbsp. honey 1 tsp. prepared yellow mustard 1 tbsp. soy sauce 1/4 tsp. ground ginger 2 pounds cubed pork shoulder 1 large onion, peeled and cut into wedges 2 medium green bell peppers, cored, seeded and cut into large squares 2 medium, firm tomatoes, cut into wedges
Directions
Combine lemonade, crushed pineapple, honey, mustard, soy sauce, ginger and cubed pork in a large bowl. Cover and refrigerate overnight.
Prepare grill. Drain pork, reserving marinade. Alternate pork cubes, onion, bell pepper squares and tomato wedges on skewers. Grill kebabs over medium heat, turning frequently and basting with reserved marinade. Cook until pork slowly browns and is cooked through.
Serves 4 to 6.
