Grilled Chicken Stuffed with Prosciutto and Basil

Ingredients (view qty in metric system instead)
2 slices prosciutto 1 tsp. coarse grain mustard 8 large fresh basil leaves 1/4 cup shredded mozzarella cheese 1 pound boneless skinless chicken breast(2 breasts total) 1/2 tsp. salt 1/2 tsp. pepper
Directions
Preheat grill. Spread prosciutto slices with mustard. Lay basil leaves over and sprinkle with mozzarella. Roll up prosciutto slices from short end. Cut a long pocket 3/4 of the way through each chicken breast. Place a prosciutto roll inside each pocket. Season chicken with salt and pepper. Grill chicken until cooked through, about 5 minutes per side.
Serves 2.
