Ingredients (view qty in metric system instead)
1 tsp. vegetable oil 1 small onion, peeled and finely chopped 1 clove garlic, peeled and minced 1 fresh jalapeno pepper, stemmed, seeded and finely chopped 2 tsp. ground cumin 1 cup canned cooked black beans, drained and rinsed 3/4 pound lean ground beef 2 tbsp. tomato paste 2 tbsp. chopped fresh cilantro leaves 1 tsp. dried thyme 1/2 tsp. salt 1/2 tsp. pepper 4 hamburger buns or rolls, split and toasted
Directions
Prepare grill. Heat oil in a small skillet over medium heat. Add onions and cook, stirring, about 3 minutes until light golden colored. Add garlic, jalapeno and cumin and cook, stirring, 2 minutes(if mixture becomes too dry add 1 tbsp. water). Transfer the vegetable mixture to a medium bowl. Add black beans and mash coarsely. Add ground beef, tomato paste, cilantro, thyme, salt and pepper and mix until well blended. Shape the beef mixture into four 1/4 inch thick patties. Place the beef patties on an oiled grill rack. Grill about 5 minutes per side until burgers are browned and cooked through. Place burgers on toasted buns and serve.
Makes 4 burgers.
