Grilled Beer Marinated Bratwurst with Sauerkraut Relish

Sauerkraut Relish: 1/4 cup white vinegar 3 tbsp. brown sugar 8 ounce can sauerkraut, drained 1/4 cup finely chopped sweet red bell pepper 2 tbsp. sliced green onions 1 tsp. caraway seed
Bratwurst: 6 uncooked bratwurst sausages 3 cups beer(not dark) 12 whole black peppercorns 6 bratwurst or hot dog buns, split and toasted
Directions
For Sauerkraut Relish: Combine vinegar and brown sugar in a small saucepan. Heat to a boil, stirring until sugar dissolves. Remove pan from the heat and cool. Stir together sauerkraut, bell pepper, green onions and caraway seed in a medium bowl. Pour vinegar mixture over sauerkraut and stir to blend. Cover and refrigerate at least 3 hours or overnight. Let relish warm to room temperature before serving.
For Bratwurst: Poke several holes in each bratwurst. Place bratwurst in a large saucepan and add beer and peppercorns. Heat to a boil. Reduce heat, cover and simmer about 20 minutes until bratwurst are no longer pink. Meanwhile, prepare grill. Grill bratwurst on a rack over medium-high heat. Cover and grill bratwurst until skins are golden, turning frequently. Serve bratwurst on toasted buns with sauerkraut relish spooned over.
Serves 6.
